Starting Over

Hey Guys!

Happy New Year – 2015!!  A lot has happened since this little blog fell by the wayside.  My girlfriends and I were out walking this morning and talking about eating healthier, juicing, etc. and I was telling them about some of the recipes I used to make – BIFOTW (before I fell off the wagon).  I decided to look up this blog and see if it was still out there – and, low and behold, it was!  And I still remember the password to start blogging on it again!!

So enjoyed going back through and reading my posts.  What a journey I was on.  I’m inspired to be that person again!

Having fallen off the clean eating wagon over a year ago, I now am back at the place I was when I first started this blog back in 2012.  Well no more.  I’m tired of being that unhealthy person.  I’m ready to be strong and vibrant!  So I’ve got my grocery list made out, hopping in the shower and heading to the grocery to stock up on yummies!

Tonight I’ll be making The Pioneer Woman’s Chicken Florentine Pasta.  It is delicious!!  I’ll also be buying ingredients to make granola and yummy salads for lunch.  I also really like the lean ground beef and brown rice patties for lunch.  So many yummy things I used to eat!!  Can’t wait to get started again!!

Goodness Gracious….

…. where does the time go??  Here it is all most the end of April.  It’s been almost 2 full months since I decided to make some major changes in my life, namely the way I eat.  Honestly, if I had known it was going to be this easy I would have done it a LONG time ago!  Who would have believed that a junk food junkie like me could give up processed food, as well as white breads/pastas, refined white sugar and table salt.   I’m being completely honest when I say this has been way easier than any diet I’ve ever tried.  And although my number one reason for changing what I put in my mouth was for health reasons, I’m beyond thrilled that the weight is coming off as well.  To date I’ve lost 8 pounds.  I hope to drop a couple more here soon so that I can have TWO blue beads in my jar!!  :))

My hubby and I went to Florida last weekend and I ate out 5 times over a 3 day period.  Finding good food to eat really wasn’t that hard.  The funny thing was that I was craving fruits and veggies (a true first for me!).  With no juicer, my body was telling me it needed some plant stuffs.  If you look hard enough on most restaurant menus you can find sides of fresh fruits or veggies.   I even paid $8 at the grocery for a bowl of cut up fresh fruit!  lol  But, boy did it hit the spot.

And I was beyond tickled when I got home and discovered that I had lost  another pound despite all my eating out!  woohoo!

So, now I’m back to juicing and eating at home.  I’ve finished up my 8 weeks of prescription strength Vitamin D.  Guess I need to make an appt to go have my levels checked again.  Honestly, I feel so much better.  I’ve still got a long way to go, but what an improvement from me at the beginning of March!

This morning’s juice.

1 apple, 3/4 cucumber, a few cubes each of honeydew and cantaloupe, 1 large kale leaf and a handful of baby spinach.  yuuuuuummmm!

Also, here’s a little enchilada type dish I threw together last week.  I had planned to make enchiladas with the 100% whole wheat flour tortillas I had bought, but when I got the package out I discovered there were only 4 left!  Dang fridge rats!  So I made the girls a pan of traditional enchiladas with just rotisserie chix, cheese and sauce, rolled up with sauce and cheese on top.  For hubby and I, I sprayed the bottom of 13×9 pan with some olive oil laid out a layer of white corn tortillas, spread a concoction of the chicken, sauce, diced onions, corn and rinsed black beans on top, laid down another layer of the tortilla, drizzled with enchilada sauce, and some shredded cheddar and baked at 350 for about 20 minutes.  OMG!  It was delicious!  I liked if much better than the traditional enchilada.  I will definitely make them again.  I just love corn and black beans in things.  They add so much flavor.

Just a Quick Note…

So, it’s been a crazy week!  4 photo sessions in 5 days has kept me hopping!  But because I’m feeling so much better I’ve been keeping up pretty good!!  I’ve even continued to eat good.  As a matter of fact, Stephanie (my daughter) and I went to Panera Bread ysterday after my session and I was thrilled with my selection.  I’m just amazed how I’m not at all attracted to all the goodies and sweet stuff any more.  NEVER thought I would see the day!  Honestly.  They were packed as it was the lunch hour, so I had time to really look over the menu.  I ended up selecting the BBQ Chicken Cobb Salad.  I have to say it was out of this world.  Lettuce,  tiny sautéed onions and green peppers, grilled corn, black beans and grilled chicken cut in strips with a scant drizzle of bbq sauce on top.  The only really bad thing was the tortilla strips that were in it.  It would have been just fine without those.  And I did not touch the two side containers of dressing.  It was quite healthy and delicious.  Definitely something I could duplicate and enjoy at home.  So glad we went there.  🙂

I’ve allllllmost lost another pound.  Just.not.quite.there.yet.but.really.really.close.  Maybe tomorrow.  🙂

Absolutely love juicing.  I have a glass of something every morning with my breakfast and I have to say, between that and good eating I feel so energetic every day.  No more sinking spells.  Shoot I can even watch tv at night now without dozing off!  lol  Guess it’s time to start adding some walking.

The garden is looking good, although I did see that another lettuce bit the dust.  Not sure what’s going on with the Romaine.  They just kind of get limp and die.  Anybody know what the problem is?

So that’s it in a nutshell!  Just wanted to pop in and tell ya’ll hello!  Hope everyone’s week is off to a great start!

Macaroni and Spinach “Muffins” & Mary Kay

Okay, so ya’ll need to slap me.  I made this recipe yesterday and I didn’t take any pictures because I was just going to copy the recipe and paste it here.  Well, don’t ya’ know that I can’t find WHERE I got this recipe from!  I thought I had pinned it to my “Recipes I Want To Try” board, but it wasn’t there.  And there are no web addresses on my paper.  😦  So no pictures.  I will paint you a picture with words instead!!    Whole wheat macaroni with a rich cheese sauce and healthy spinach, combined and cooked in a muffin tin.  The result:  cute little macaroni and cheese spinachey muffins to enjoy for lunch or a dinner side.  Sure to hit the spot!  🙂

Macaroni & Cheese Spinach Muffins 

  • 4 cups COOKED whole wheat or high fiber macaroni  (I used whole wheat – YAY ME!)
  • 1 Tbsp butter
  • 1 Tbsp flour
  • 1 cup skim milk  ( I used 1%)
  • 1 garlic clove, minced  (I used the minced garlic in the jar)
  • 3 oz sharp cheddar cheese, shredded
  • 3 oz Gruyère cheese, shredded  (I used 6 ozs of 2% cheddar)
  • 1 egg
  • 1 egg white
  • 1 10 oz package of frozen chopped spinach, defrosted, drained and patted dry (or you could use 1 cup of fresh cooked spinach)
  • salt & pepper to taste.


Pre heat oven to 400 degrees.  Lightly mist a 12 cup muffin tin with cooking spray.  In a small pot, melt the butter over medium heat.  Add the flour, mixing it into the butter until thick.  Stir in the milk and garlic and raise the temp to bring the mixture to just under a boil.  Add the cheese and whisk mixture together until thoroughly combined into a cheese sauce.

Remove the cheese sauce from heat and then mix in the egg and egg white (binding agents) until combined.  In a large bowl, combine the pasta, spinach, cheese sauce, salt and pepper and mix together.  Spoon the mixture evenly into the cups of your muffin tin.  Bake for 10-15 minutes until the tops are slightly browned.  Let cool 5 minutes before removing from muffin tin.

Yields 12 muffins.  Weight Watcher Points Plus:  4 per muffin.

My thoughts on this recipe:

  • I made this with Mueller’s whole wheat pasta because it’s the only brand of ww elbow macaroni that my store carried.  It was good!  Didn’t mind it at all.
  • I only used a little more than 1/2 of the box of spinach.  I think a whole box would have been a tad overwhelming.
  • I would have preferred a little more of the cheese sauce.  I found it a little dry.  But then it would have had more calories, wouldn’t it?!?!  =D
  • It made way more than 12 muffins!!  I had to do a side casserole dish as well.
  • The muffins didn’t hold together when I took them out.  I did manage to get about 6 out in the shape of a muffin.  lol  I think next time I’ll just make it in a 13×9 pan.
  • It was very good.  Hit the spot for me.  I froze the muffins that managed to keep their shape and will have them for lunches.  Stephanie did not care for the spinach.  She said there was too much of it.  She would prefer it with broccoli instead.  🙂
  • Give it a try!  I think you’ll like it!!  🙂


On a different note, I did something the other night that I’ve never done before in my life!  I went to a Mary Kay party and had a little makeup makeover!  I’ll be honest, I went in thinking I’m not buying anything!  This stuff is going to cost a fortune and I’m just not spending my money on it.  And then a funny thing happened.  I absolutely loved the products!  They were absolutely wonderful and made me look sooo good!  The colors they chose for me were just perfect and everything was so light and smooth.  No heavy, cakey, oily feel.   I was sold.   I bought it all.  It was expensive, but it only takes a dab, so I know it will last for months.  And no more guessing at Target, getting home, not liking what I bought and throwing it away.   🙂

So, if you see me out in public without make up on, feel free to ask me where my Mary Kay is!!  🙂

Took my Vit D today.  Week 3.  5 more weeks to go and then a recheck.

Welcome To My Brand New Blog!

Hey everybody!  My name is Sandy.  I am a wife, a mom and a photographer.  A lot of you already know me either as a friend or via Sandy Keys Photography.  You are probably wondering what it in the world I am doing with ANOTHER blog?!?  Well, those of you who do know me, or follow me via my blog or facebook know that I have not been feeling well lately.  For the better part of a year, but getting continually worse, I’ve been experiencing joint aches and pains, bouts of being tired for days on end, bouts of “foggy brain”, lack of focus, no inspiration, sitting like a hermit in my house ….

Well I finally drug my butt to the doctor last week and found out that, for beginners, I am low in Vitamin D.  So I’ve been prescribed Vit D2.  One pill once a week for 8 weeks (50,000 units).  Then a recheck.  I forgot to tell you that I will be 50 this June, so I’m positive that the big “M” word is in my near future.  I know that Madam “M” can wreak total havoc on a woman’s body, so I was a little disappointed when the doctor came back with just low Vitamin D.  I mean I was happy, cause that seems like an easy fix, but really, ALL those symptoms just because I’m a little low on Vitamin D?  Really?

So, I’ve come to the conclusion that my body ain’t gonna fix itself.  That I’m going to have to help out.  A lot.  I have to do the work to make myself feel better.  And instead of proclaiming some big broad goal, I’m going to list just a couple of small, achievable goals.

I’m going to concentrate on one day at a time.  Not a month, or even a year.

Each day I am going to eat as much “real” food as possible and cut out the processed or “fake” food.

Each day I will go outside at least 20 minutes a day.  Even if it’s just to sit on my front porch and rock while watching the birds.

That’s it.  These are the goals I’m going to start with.

And I thought ya’ll might want to help me!  Lucky you!!

So why did a start a new blog?  It’s going to be a journal of sorts.  Someplace for me to jot down my accomplishments.  The things I try.  The things that work.  The things that don’t work.  Recipes I find that I like.  Tips on grocery shopping …  etc. etc.  If no one besides me ever reads the blog that’s okay.  It’s a great place for me  to come everyday and jot down my thoughts.  BUT, if you’d like to participate I would absolutely LOVE your input and your support!

Do you have favorite real food recipes?  I’d love to see them!  Do you have tips on dealing with Madam “M”, I’d love to hear those as well.

And let me just say now, that this page will be written like I’m sitting at a table with a cup of coffee while we chat.  I don’t have to be politically correct here like over at SKP.  =>

So, because I am a photographer and I believe that a blog post should have a picture, here’s the book that I am currently reading.  Love the title!  It is a fantastic book.  It does such a good job of explaining what “real” food is.  What type of hidden bad things are found in the everyday foods we eat.   How much sugar and salt we should be consuming everday vs how much we actually consume!  Yikes!  I will share a funny story about bbq sauce shopping with my hubby on tomorrow’s post.
