A Few New Recipes

Hey Everyone!  I’ve got a few new recipes that we’ve tried and liked that I thought I would share.  Sadly, I have no pictures.  I know, I suck.  What kind of photographer am I??  lol

These two are the same, just different kind of meat.

Burger with Brown Rice & Parsley  (this was absolutely delicious!)

  • 1 lb ground beef  (the leaner the better)
  • 3/4 cup cooked brown rice
  • 6 Tbsp fresh parsley, minced

Blend together, divide into 4 patties, and grill or cook as you like.  We grilled ours and they were soooo good!  Loved the brown rice in there.  Just added a little somethin’ special.

It actually called for a sauce which was an onion sliced thin and sautéed with 1 1/3 cups of 100% grape juice and 3/4 cup balsamic vinegar.   Sautee onions, add liquid and boil until reduced.  Honestly, none of us cared for the sauce.  Would have preferred just plain sautéed onions.  But you might like it!!

Chicken Version

Exactly as above, except made with ground chicken.  I cooked these in a skillet with a dab of olive oil.  Awesome!  Ate one with a little bit  of bbq sauce.   Great for lunch!

Home-Made French Fries

  • 4 Idaho potatoes (or large red potatoes), skins on cut into fry shapes  🙂
  • 1/2 Tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp cayenne pepper
  • 1/4 tsp salt
  • 1/4 tsp pepper

Preheat oven to 475.   Roast 15-20 minutes turning occasionally, until they are golden brown and fork tender.

These tasted really good, but would have preferred them crunchier.  But they were good.

Home-Made Refried Beans

These are cooking as we speak!!  Oh my goodness they smell so good!   I will post the recipe after they are finished and I’ve given them a try.  They are basically dry pinto beans, fresh garlic, onion, cumin, salt & pepper.  They cook in 6 cups of water in the crock pot all day and then they get mashed.

Think how delicious these would be on a whole wheat tortilla with some cheese, sour cream, maybe avocado…. rolled up.  Oh My!  Or how about a dip for my favorite Skinny Chips!!  I want some NOW!  They’ve got 2 more hours to cook.

Tonight we’re having steak and a roasted veggie.  I bought fresh asparagus, Brussel sprouts, green beans and broccoli.  I’m thinking we’re going to try asparagus tonight.  Hope it’s good!

Finally! :)

6 lbs lost in a month and 2 days.  🙂  All through just cutting out processed food, white sugar (except for my sweet tea), white flour, etc.   Not one drop of  sweat dropped in the loss of this weight.  Although I think it’s time.  Ready to speed things up a bit!  Those little ears?  They belong to my pesky-curious-always-into-everything kitty, Rocky.  He just had to come check out what was in the glass.  🙂

Thumbs Up, Thumbs Down

Roasted green beans with balsamic vinegar and olive oil….   I could have eaten the entire pan by myself.   And let me just tell you that I’m not a huge green bean fan.  Course we only eat Green Giant out of the can, so there you go.  I decided to give these roasted beans a go and am so glad I did!  Love them!

Let me just say that this picture does not make them look appetizing AT ALL!  I should have plated them all nice and pretty with a fork and napkin  …. but I was cooking fish and pasta at the same time.  You are lucky to see a picture at all!    That’s my story and I’m stickin’ to it.  🙂

These were super simple to make.  Buy a bag of prewashed and ready to eat fresh green beans (I think mine was a 12 oz bag).  Pour into a large ziploc bag.  Add 1 1/2 Tablespoons of olive oil and 1 Tablespoon of balsamic vinegar.  Squish it together until beans are coated.  Pour out in a single layer on foil covered cookie sheet.  Put into preheated 450 degree oven for 20 minutes.  Grate some fresh Parmesan cheese over the top and enjoy!!   I couldn’t stop eating them, right off the pan!  I was just so pleased with how they turned out.  We will definitely be having these more often!  No more canned green beans!!

Brown Rice Pasta.  I did not like this AT ALL!  It tasted all right, but was mushy and sticky.  Just not appealing.  Like whole wheat much better.

I decided to be brave this morning and add more veggies to my juice.  So far they’ve been mostly fruit with some cucumber and baby spinach.  But today I added carrots!

So, what’s in there?  1/2 apple, 1 pear, 1/2 lime, 1/2 cucumber, 5 baby carrots, and a handful of baby spinach.

For all of you who are saying, ewwwwwwww!  I was right there with you!!  You could have never told me I would actually like this stuff!  In fact, I actually love it!  I look forward to it every morning.  Although it looks thick, it really is not.  It’s actually less thick than the OJ you buy at the store.

I love adding a little bit of lime.  It’s not that I’m a lime lover.  But it masks the flavor of the veggies and just adds a nice fresh flavor.  And they do not all come out green!  lol  It just depends on what you add in.  Strawberries make it a pinker/redder color.  Oranges more towards the yellow/gold side.  I have had some concoctions come out brown.  haha!  But they all tasted really good.  Now my friend Martha told me she added celery to one of hers and they didn’t like it at all.  So I’m staying away from celery.  I do want to try some other green leafy veggies though.   Getting brave!!  🙂

Check out the new and very rare bird I spied at my bird feeder this morning.  Very unusual, don’t you think?

Amazing Salad!

Tried my hand at a salad similar to the one I had at Panera Bread the other day.  Not bad if I do say so myself!  🙂

Cast of Characters

  • Bagged Romaine lettuce
  • Boxed baby spinach
  • Steam fresh whole kernel corn
  • Canned black beans
  • sautéed onions and green peppers (chopped smallish)
  • Hard boiled egg
  • Rotisserie chicken (room temp)
  • BBQ sauce

Okay, so I sautéed the onion and green peppers in a bit of olive oil and set aside to cool.  Meanwhile, threw the Steam Fresh corn in the microwave.  When it was done, I threw a few spoonfuls in the pan to brown up a tad.  Rinsed a few spoonfuls of the black beans and set aside to drain.  Chop up the egg in the egg/slicer/chopper thingie.  Slice up some chicken breast into long, thin strips.

Time to assemble!  Mix some Romaine and spinach in a bowl.  I use my pasta bowls.  They are the perfect size and shape for salad.  Throw some onion and green pepper, corn and black beans on top.  Mix up a bit.  Place chicken strips on top.  Drizzle your favorite bbq sauce on top.  I used the new Weber sauce.  It’s pretty low in sugar and not many ingredients.  Sprinkle some hard boiled eggs on top.  Devour!  It was delicious and filling.
