Roasted green beans with balsamic vinegar and olive oil…. I could have eaten the entire pan by myself. And let me just tell you that I’m not a huge green bean fan. Course we only eat Green Giant out of the can, so there you go. I decided to give these roasted beans a go and am so glad I did! Love them!
Let me just say that this picture does not make them look appetizing AT ALL! I should have plated them all nice and pretty with a fork and napkin …. but I was cooking fish and pasta at the same time. You are lucky to see a picture at all! That’s my story and I’m stickin’ to it. 🙂
These were super simple to make. Buy a bag of prewashed and ready to eat fresh green beans (I think mine was a 12 oz bag). Pour into a large ziploc bag. Add 1 1/2 Tablespoons of olive oil and 1 Tablespoon of balsamic vinegar. Squish it together until beans are coated. Pour out in a single layer on foil covered cookie sheet. Put into preheated 450 degree oven for 20 minutes. Grate some fresh Parmesan cheese over the top and enjoy!! I couldn’t stop eating them, right off the pan! I was just so pleased with how they turned out. We will definitely be having these more often! No more canned green beans!!
Brown Rice Pasta. I did not like this AT ALL! It tasted all right, but was mushy and sticky. Just not appealing. Like whole wheat much better.
So, it’s been a crazy week! 4 photo sessions in 5 days has kept me hopping! But because I’m feeling so much better I’ve been keeping up pretty good!! I’ve even continued to eat good. As a matter of fact, Stephanie (my daughter) and I went to Panera Bread ysterday after my session and I was thrilled with my selection. I’m just amazed how I’m not at all attracted to all the goodies and sweet stuff any more. NEVER thought I would see the day! Honestly. They were packed as it was the lunch hour, so I had time to really look over the menu. I ended up selecting the BBQ Chicken Cobb Salad. I have to say it was out of this world. Lettuce, tiny sautéed onions and green peppers, grilled corn, black beans and grilled chicken cut in strips with a scant drizzle of bbq sauce on top. The only really bad thing was the tortilla strips that were in it. It would have been just fine without those. And I did not touch the two side containers of dressing. It was quite healthy and delicious. Definitely something I could duplicate and enjoy at home. So glad we went there. 🙂
I’ve allllllmost lost another pound. Just.not.quite.there.yet.but.really.really.close. Maybe tomorrow. 🙂
Absolutely love juicing. I have a glass of something every morning with my breakfast and I have to say, between that and good eating I feel so energetic every day. No more sinking spells. Shoot I can even watch tv at night now without dozing off! lol Guess it’s time to start adding some walking.
The garden is looking good, although I did see that another lettuce bit the dust. Not sure what’s going on with the Romaine. They just kind of get limp and die. Anybody know what the problem is?
So that’s it in a nutshell! Just wanted to pop in and tell ya’ll hello! Hope everyone’s week is off to a great start!

Alrighty, so here goes… it’s a pasta casserole.
I sauteed some chopped onions, green peppers and minced garlic at the same I browned up 2 turkey Italian sausage links (casing off and crumbled). First time using turkey sausage. Loved it! After it was browned I poured this into a bowl and set aside. Browned up about 1/2 lb of lean ground beef. Drained. Added onions and sausage back to pan and added 1 jar of Classico Sweet Basil spaghetti sauce and 2 tablespoons of wheat germ. Also added in some leftover canned corn and a couple spoonfuls of canned black beans. OMG! It tasted sooo good!!
Boiled up a box of Barilla Plus Penne pasta. This is one of the better pastas listed in my Skinny Chicks book. Found it at Walmart today and thought I would give it a try. It’s made with multi-grains, flax seed, chick peas and a few other things. It was very good. I liked it better than whole wheat, but will continue to work on eating more whole wheat pasta.
Added everything together, gave it a good stir and served. Totally hit the spot for me. Didn’t need much at all as it was quite filling. Definitely a recipe I will make again.
** Need to find a sauce with a little less sugar. This one had 9 grams. Or need to find a homemade sauce recipe that I really like. Didn’t like the last one I made.
Juicing. So I still haven’t gotten my behind in gear to photograph my beautiful new juicer. but I’ve used her every day. Yesterday I juiced 1 orange, 1 apple, 5-6 strawberries, 1/3 cucumber and about 10-12 baby spinach leaves. It was pretty good and I was quite full when I was done drinking it.
Today I juiced 1 apple, 1 kiwi, 1 orange and 1/2 scoop of flavorless protein powder that my neighbor, Miss Martha, let me try out. It was DELICIOUS! Loved it! Tasted like an orange julius. 🙂 Picked up a big bag of apples today, a couple of pears and more kiwi. Going to keep experimenting. I’m surprised at how easy it is to get a whole bunch of fruits and veggies down in just a matter of minutes! And cleanup takes less than 10 minutes. Honest. 🙂
Okay, just a quick note. My juicer arrived this afternoon and she is beautiful! I gave her a quick wash up and loaded her up with 2 red apples, 1/2 of a cucumber and about 10 red grapes. She ate those up and spit out a large glass of juice lickety split! First thoughts – that fruit combo I used made a brown colored drink (hmmm – not uberly attractive). It tasted delicious however, for me, it was just a tad too sweet. I guess that’s why you add in the veggies! Or maybe some lime. I will definitely have to experiment until I come up with the right sweetness. I will say that when I was done drinking it I was quite full! Didn’t want ANYTHING for a good couple of hours. As a matter of fact, I really wasn’t that hungry for dinner. I only had a small helping of flounder and broccoli. I’m done eating for the night!
Cleanup was super easy and fast. The only thing is you’ve got to get the little basket with the blades out immediately and soak it in a bowl of hot, soapy water or it will stick on for sure! No biggie. I put her on the corner of my island so she is ready to use at any time. If I put her in the pantry and had to pull her out every time I know I wouldn’t use her. Looking forward to making something to go with my toast in the morning.

Well it’s been about a week and a half since we planted our little garden and things are just hopping along! It is looking wonderful! Lost one lettuce, but other than that everything is faring pretty well. The radishes are getting big and the carrots are just now coming up. It’s so exciting to go peek at it everyday and see how it’s doing! Love it! I did notice today, however, that the leaves on my cherry tomato are looking kind of crinkly and curling in on the edges… anyone have any guesses as the cause? I’ll take a picture tomorrow.

Here’s Gidget giving everything a quick glance over. Now we just need to come up with something to cover the path … probably some sort of loose rock. Anything to cover the dirt and mud!
And my garden bunny…. he’s been with me a long time. His “hare” is getting pretty worn, (lol) and he lost one of his legs in a freak accident, but I still love and adore him. I thought he would be perfect as the garden centerpiece. Don’t you? I know you do. Now please tell my hubby that he looks cute amidst the lettuce. 🙂
On another note, I ordered a juicer and it’s due in tomorrow!! I can’t believe that I’m actually excited about drinking some fresh fruit juice!! Not sure about veggie juice yet, but maybe I can just sneak a few in with the fruits. 😉 I’ll let you know what we think!!
My friend Eileen sent me a link to this awesome video today. It’s about an hour and a half long but so informative and thought provoking. Really helped to solidfy my commitment to eat real food. I’ve got a long way to go, but have made great strides already. I’d like to check into juicing, although I have to be honest, the thought of drinking lots of veggies mixed together does NOT sound appealing to me. If anyone has any good juice recipes and/or tips, please share! I need something that has a sweeter taste vs. a heavy vegetable flavor. At least to start!
